I don't know ... could be a pre-op cow, or a post-op bull who still acts very masculine.

Unfortunately it seems that every bovian in the movie is at the same stage (except, possibly, one or two definite females). Movies being what they are, though, I'd imagine the "hero" (Otis, pictured) will hook up with the "female" (Daisy) at some point, so s/he's probably on hir way to being a man (unless he's a male who's really determined to become a lesbian).
