Something I don't think I noted earlier.
In the documentary on the fourth Star Wars DVD, the narrator proclaims that in 1997 Lucas "returned to - and perfected" his masterpiece[1].
That just amused me, since it's packaged with the 2004 edition, in which further changes have been made.
That is all.
[1] I use the word in its technical sense, meaning "the piece a Journeyman creates in order to graduate to Master," rather than its more colloquial usage, which has come to mean something akin to "Magnum Opus".

Did they take out/modify that scene when the Stormtroopers walk under that blast door in the Death Star and one of them bangs his head?

Most of the changes are improvements on the dodgy CGI of the 1997 SE (and minor oversights like English text). The really big ones come in Empire and Jedi; they've reshot all of the Emperor's appearance in Empire (which is nice as you have the same actor instead of dodgy old woman), and taken the opportunity to re-write the dialogue (which is not so good), and they've inserted young Haydn into the end sequence as Ghost Anakin.
Ach. With one hand he giveth, and with the other he taketh away...
